Chicken Tetrazini

Ingredients
- 4 chicken breasts
- ¼ tsp. Pepper
- 2 tsp. Salt
- 1/8 tsp. Nutmeg
- 1 tsp. Onion salt
- 1 c. 2% milk or Half & Half
- ½ tsp. Celery salt
- ½ lb. Spaghetti
- 1 T. lemon juice
- ½ lb. Mushrooms (8 oz.)
- 2 T. flour
- 6 T. butter
- paprika
- 2/3 c. parmesan cheese
- ***2 ½ c. chicken broth -- either store bought or made by poaching a chicken.
Directions
- Cook the chicken with salts. Cool and cut into small pieces. Refrigerate.
- In sauce pan, melt 3 T. butter. Stir in flour, ¼ tsp. Paprika, 1 tsp. Salt, pepper, nutmeg. Add cream and 2 ½ c. chicken broth. Cook and stir until it boils. Pour mixture over chicken. Refrigerate.
- Boil water for pasta and cook for 6 minutes – not until done!!!
- Drain pasta and place in a 9X13 baking dish. Saute the mushrooms in 3 T. butter until soft, not brown.
- Sprinkle with lemon juice and ½ tsp. Salt. Toss mushrooms with pasta. One hour before serving, stir in chicken with sauce. Sprinkle with cheese. Bake covered for 25 minutes, or until bubbling at 400 degrees.
